Yellow bolete is appreciated for its substantial flesh and the way it comes back after rehydration. At intake, our workers check smell, visible mold, insect damage, and soil. Mushrooms that do not meet the sorting standard are removed. The rest are cleaned and dried. A finished piece should feel dry, with no damp or sticky surface. Before cooking, rinse the mushrooms and soak them until the flesh has softened through. Our Dried Yellow Bolete works with chicken, pork, beef, potatoes, and both clear and creamy soups. The soaking liquid can be passed through a fine filter and added to broth.
