There are five core methods for drying edible fungi: natural drying, hot air drying, freeze drying, microwave drying, and charcoal baking.
Natural drying method: Use sunlight and ventilation to dehydrate naturally. It is low-cost but is subject to weather restrictions and is prone to moisture and mildew. It is suitable for sunny and dry seasons.
Hot air drying method: Through mechanical air supply and temperature control (usually 40-60℃ step-by-step adjustment), it is suitable for all seasons, has high efficiency and stable quality, and is suitable for large-scale production.
Freeze-drying method: first quick-freezing and then vacuum sublimation and dehydration to retain nutrients, color and rehydration to the greatest extent, but the equipment cost is high and it is mostly used for high-end products.
Microwave drying method: Use microwave molecular friction to generate heat to quickly dehydrate, with high efficiency and short time. It requires precise power control to prevent local scorching.
Charcoal roasting method: The traditional indirect heating method can give a special smoky flavor and requires manual turning and temperature control to avoid smoke contamination or scorching.
