It is extremely difficult to identify wild mushroom species, and it is difficult for ordinary consumers to accurately distinguish between poisonous and non-toxic species. Freezing treatment (including household refrigerator freezing or industrial quick freezing) cannot decompose or inactivate natural toxins that may be present in mushrooms (such as alpha-amanitine of the genus Amanita). These toxins remain active in low-temperature environments, are resistant to high temperatures, and cannot be destroyed by ordinary cooking.

In addition, the freezing process may cause the cell structure of wild mushrooms to be destroyed, resulting in poor taste, loss of nutrients, and even ice crystals piercing the cell membrane, creating conditions for microbial growth and accelerating spoilage. Even if the mushrooms appear fresh before freezing, if they are toxic, eating them after freezing can still cause severe poisoning reactions such as nausea, vomiting, abdominal pain, liver and kidney damage, and even life-threatening reactions.
