The core method of preserving dried morels is to prevent moisture, insects and oxidation.
1. Sealed storage
Dried morels need to be put into glass jars, food sealing bags or vacuum packaging bags, and the air in the bags must be exhausted and then sealed. If you use ordinary fresh-keeping bags, it is recommended to wrap them in two layers and tie the mouth of the bag tightly to prevent moisture return.
2. Add desiccant
Put food-grade desiccant or pepper packets in a sealed container, and add 1 small packet of desiccant (such as silica gel particles) for every 100 grams of fungi. If stored for a long time, check the moisture absorption every 2-3 months and replace the desiccant in time.
3.Environmental control
Store in a cool, dark and ventilated location (such as inside a cupboard), and avoid being near the stove or window. In humid areas in the south, the sealed jar can be placed in the refrigerator compartment and the temperature should be controlled at 0-5°C.
When taking it daily, avoid grabbing it directly with your hands. Use dry chopsticks or a spoon to take out the required amount, and reseal the remaining bacteria immediately. High-quality dried morels can be stored for 12-18 months if stored correctly. If the surface is sticky, moldy or has an odor, it must be discarded immediately. Morels that have reached the dryness standard will break into flakes when gently broken by hand. If they become soft, it means they have been affected by moisture. They need to be spread out to dry or dried in an oven at 50°C for 10 minutes before repackaging.
